The Second National “Problem-Oriented Bread Event” was held on Wednesday, September 16, 2026, in Mashhad Innovation Factory Conference Hall, organized by the Research Institute of Food Science and Technology (RIFST). The event aimed to identify challenges across the bread production-to-consumption chain and develop scientific and technological solutions, bringing together a number of officials, managers of executive bodies, researchers, academics, students, and food industry professionals active in the bread sector.
As part of the event, a specialized panel discussion on the bread chain was held with the participation of Seyyed Hassan Hosseini, Deputy Governor and Governor of Mashhad; Dr. Seyed Mohammad Ali Razavi, President of RIFST and Head of the Event; the Director General of Grain and Commercial Services of Razavi Khorasan Province; the Director General of the Agricultural Jihad Organization; the Head of the Mashhad Bakers’ Union; the Head of the Mashhad Confectioners and Pastry Makers’ Union; the Director General of Standards of Razavi Khorasan Province; and a number of food industry professionals active in the bread sector, including Razavi Food Industries, Mazareh Bread, and Mashhad Baking Industries.
The panel addressed a range of key challenges, including the quality of wheat and flour, bread production and baking technologies, reduction of bread waste, the nutritional importance of whole-grain bread, and the need to complete the bread value chain.
In addition, as part of efforts to strengthen joint cooperation, a Memorandum of Understanding (MoU) on the “Bread Value Chain” was signed between the Research Institute of Food Science and Technology, Mashhad County Governor’s Office, and members of the Policy Council of the Bread Event.
Subsequently, the technology-based and problem-oriented projects submitted to the Secretariat of the Second National Problem-Oriented Bread Event were presented by the participants. Following the final evaluation by the judging committee, three outstanding projects were selected and recognized.
Concurrently with the event, an exhibition showcasing the capabilities and achievements of the food industry in the bread sector was held, providing an opportunity for direct interaction and networking among researchers, officials, technology developers, and food industry professionals.
The Second National “Problem-Oriented Bread Event”, with its emphasis on completing the bread value chain, advancing technology, and transforming real-world industry challenges into scientific and practical solutions, represented a step toward strengthening the role of the Research Institute of Food Science and Technology in bridging “research, technology, and industry” and advancing efforts to address strategic challenges in the areas of food and food security in the country.
